I’m looking for the holdfast vacuum adapter, that part with the bearing where the hose attaches and the threaded rod connects. Open to similar products for a vacuum system.

thats the vacuum generator by Holdfast. The through the headstock device can be adapted to use a regular vacuum pump.@Kirk Witmer Differences: Holdfast needs a compressor (noisy and power hungry). Oneway needs a vacuum pump (generally quiet and most use a fractional HP motor) which I prefer, but you probably don't have one at this time. Downside: threads onto the outboard spindle - which means you probably would have to remove the handwheel to install. PITA IMO.
Most lathes (that I'm aware of) have a hollow spindle - most likely true with your Grizzly. A slide in/out rotary adapter is the best and easiest option in my opinion. See @Tony Trigg example above. You just need to match your spindle's ID at the outboard end. I've been using a home made version since 1996.
