That's exactly the motivation for building that rack. Once I'd populated the holes, I found four MT knob turning mounts that all did the exact same thing. I'd make one for a little job then into a drawer it would go. Months lathe, the same type job would come up and I would have to make another MT holder because I couldn't find the other one... and so on.
As Leo explained, those are cup chucks. They are slightly tapered on the inside. Mine are smaller than the one in the video. Smaller ones are useful for doing a production runs of something like egg cups and spinning tops. That is how I learnt to do most of my turning outboard without tailstock support.
