Can't seem to get a proper identification. I think its olive but im not sure what kind. The tree is coming down soon and I'm unsure how much I should keep.

Take some leaves and a bark sample to a local nurseryman/horticulturalist. If the pictures are still in your camera, bring it along; or take some new pictures if necessary. They love to chat about stuff like this, even more if you look interested in buying something to replace it.
 
If it is in fact Olive, keep all you can possibly store! An absolutely fabulous wood to smell and turn, although it will crack if it hasn't already. If I had a big truck, I would drive out and help!!!😀
