I used to travel to SWAT with a club member who had an RV and we stayed at various RV parks in Wichita Falls, Temple, and Waco. We stayed a couple times at
Quail Crossing RV Park southwest of Waco and I think that it is nice. It is out in the country and the two times that we were there, there were only a handful of other RV's. They have a bath house, water, electricity, sewer, cable TV, and WiFi. Nothing fancy at all, but then it was just a quiet place to sleep without a bunch of bright lights and noise. If my recollection is right, ti is about twelve miles from the convention center. There are a couple RV parks on I-35 north of Waco. I-35 RV Park says they are in Waco, but they are much closer to West -- about 12 or 13 miles from the convention center. Being on the the Interstate there is a lot of traffic noise, lights, and a big crowd. Another one that is a bit close, I believe is called Northcrest RV park. I drive through Waco a lot and from what I can tell, it is primarily permanent residents. It is also on the Interstate, but it looks nicer than the I-35 RV park. The Waco North RV Park, despite their name, is actually north of West and would be almost 30 minutes to the convention center. Unlike Wichita Falls, there aren't any really close places to the convention center. The Heart of Texas Fairgrounds says that they have RV hookups. I've never been there and don't know anything about it, but I suspect that it might be parking on a big asphalt lot at the fairgrounds. They might not be open if there isn't anything goin on there.
I found this rating of RV parks:
http://www.rvparkreviews.com/regions/texas/waco
The Quail Crossing RV Park ranked only average because it didn't have a pool or meeting room and other amenities while I-35 RV park ranked much higher, but people complained about traffic noise, etc. Another thing I noticed is that Quail Crossing now has permanent residents. It has been several years since I was last there so things may have changed. So, I guess that you have to choose what seems to fit your needs the best. I have stayed at the Hilton for the past several years which make things really convenient.
There is a tiny but good BBQ place, Rusty Star, near the intersection of Texas 6 and FM185 (road to Crawford). It would be close if you are staying at Quail Crossing. Of course, Waco has a bunch of good eating places within walking distance of the convention center.
